A TRADITIONAL RECIPE FROM PRAIANO: FLYING SQUID AND POTATOES
A tasty specialty of the Amalfi Coast: a traditional dish from Praiano village where the ingredients of the peasant tradition are masterly combined with those of the local pescato. Here is the procedure for making the original recipe that is prepared in the homes of the locals.

“Flying squid and potatoes” is a traditional dish from Praiano, a small town of the Amalfi Coast.
This is a delicious combination of flavours: shellfish and vegetables. The first ones, according to what fishermen say, are caught in the area from Praiano to Punta Campanella and the second ones are cultivated on terraces on the hillside.

Flying squid and potatoes
Method
Firstly, cut the flying squid into rings and its tentacles.
Secondly, cut the potatoes into cubes and fry them until they are crisp and golden-brown. Salt and set aside.
Heat the oil in the same pan and fry the garlic and chili pepper. When the garlic will be brown remove it and add the flying squid. Let them cook, add wine and simmer until the liquid is reduced. Put the lid on and cook over a low flame for approximately 20 minutes.
When the flying squid is almost cooked and tender, add the potatoes and if necessary some water, season with salt and let cook for about 10 minutes more. Stir to mingle the flavours .
Before removing from the heat, sprinkle with the parsley, then mix and serve.

- 1kg of flying squid
- 500 gr of potatoes
- 1 glass of white wine
- 1 clove of garlic
- oil
- salt as required
- chili pepper as required
- parsley as required
